Truffles! There are truffles in this story!

In addition to being rich and famous, Anatolii was a known gourmand. And so, inevitably, a dish was created and named for him and served with gusto in elegant hotels and restaurants throughout Europe. The dish featured a trussed chicken, browned in butter and cooked with carrots, turnips, and a generous helping of... wait for it... truffles. "Poularde Demidoff" appears in 19th century phrasebooks for travelers and you can still find the recipe in certain cookbooks.
